Troy Graves, the celebrated chef from Tallulah and Eve, found himself without a job late last year when Eve closed in the Gold Coast before owners Matt Fisher and John Ward announced a new partnership with chef Martial Noguier to open Bistronomic.
Today, however, news emerged that Graves will be the executive chef at Montarra, a steak and seafood restaurant in Algonquin, in the northwest suburbs. Eater tried getting Graves on the phone to confirm, but didn't connect. Chicagoist, however, spoke to Graves, who said he will begin his tenure at the restaurant tomorrow.
As for how he ended up there? "I talked to the restaurant's owners and it seemed like a good fit right away," Graves said, after a former Eve customer recommended him for the job. Don't expect many menu changes in the beginning as Graves wants to get comfortable in his new kitchen. But once Graves is settled in, he'll definitely want to make his mark. And from all the positive press he's had in the past, the people of Algonquin will likely be a happy bunch.
