It looks like Sixteen isn't the only restaurant making changes in its kitchen this week. The Purple Pig has just hired Jaime Canete on as sous chef. Canete, who interestingly enough also worked in the kitchen at Sixteen for a spell, most recently was the sous chef at Tony Mantuano's Terzo Piano. He also spent time in the kitchens at Spiaggia. Mantuano is also a partner at the Purple Pig and Canete said, "It was very important for me to stay with Tony, so this is the best of both worlds."
Down in Little Italy, Salatino's announced that Joe Farina is that restaurant's new exec chef. Farina joins the Scott Harris-owned restaurant following many years as corporate chef at Rosebud and his own South Side spot, Cafe Bionda. Some of the few menu changes Farina has implemented include adding a sausage bar, a meatball salad and linguine scampi diavolo.
