Regardless of rate increases, Alinea has no problem filling its seats. "We have waitlists of over 75 names per night. We could charge double and still be full," said co-owner Nick Kokonas, who was responding to a question whether a rate increase of $15 to $210 for the tasting menu would hurt business.
