The James Beard Awards are a big deal and so is the gala feast that follows the ceremony. While a couple dozen chefs will prepare dishes for the fete, Chicago will be represented by Wave's Kristine Subido and Kendall College's Marco Bahena, who won the 2011 S. Pellegrino "almost famous chef" award. Subido will prepare Hiramasa Kilawin: cane-vinegar marinated amberjack with pickled onion, chile and chicharron.
