Falafill is continuing to make progress on the expansion announced in January and the owners just signed a lease for an Oak Park location this past week, with a Gold Coast spot soon to follow.
In the meantime, they are continuing to innovate at their Lakeview shop and plan to start a new collaboration with Chicago chefs starting June 1. Each month a different chef will create a wrap or sandwich to be featured at Falafill, with $1 from each wrap benefiting the chef's charity of choice.
They have already secured a great line-up of chefs with pretty inventive dishes for this summer, including:
June: Stephanie Izard of Girl & the Goat, raising money for Share Our Strength. Classic hummus, classic falafel, shaved Brussels sprouts salad, shallot aioli, yuzu harissa.
July: Mark Steuer of The Bedford, raising money for Green City Market. English pea and lemon falafel, sweet pickles, sambal yogurt.
August: Chuy Valencia of Chilam Balam, raising money for Latino Scholarship Fund. Roasted corn falafel, spicy lime-arbol chile aioli, chunky heirloom tomato molcajete salsa, housemade Oaxacan-style string cheese, grilled green onion.
Owners Maher Chebaro and Nemer Ziyad are currently in discussions with others chefs and hope to highlight Chicago's culinary diversity. Falafel for a great cause, sounds pretty good.
