While you can't get an actual reservation until May 23, Perennial Virant officially opens its doors tonight for dinner. The made-over restaurant with Michelin-starred chef Paul Virant, who also owns Vie in Western Springs, will start letting people belly up to the new bar 4:30 and the dining room will start seating at 5 p.m. Virant, known for his farm-to-table menus, will bring a new approach to the restaurant set across from Green City Market.
