Behind the Scenes of Grant Achatz's Time 100 Photo Shoot

Grant Achatz is no stranger to working with some odd ingredients, so it's no big surprise that his photo shoot for the Time 100, the magazine's list of the world's most influential people that he was named to last month, would involve some interesting creatures.

Photographer Martin Schoeller's team arrived in Chicago a day before the shoot and he said Achatz insisted on making them dinner, which Schoeller called "a mind-changing experience" to eat at Alinea "because you've never seen food like this or tasted food like this." For the shoot, because Achatz cooks a lot of pheasant, Schoeller said it made sense to shoot him with a live pheasant, which didn't want to stay put on Achatz's shoulder. It kept jumping off, flying up to perch atop a chalkboard or sail to the ground, but eventually Schoeller got his shot.
