Patricio Sandoval's Baja Burger at Mercadito

As part of Eater's first ever burger week, chefs at three Chicago restaurants that don't serve burgers agreed to make a special limited-edition burger, served just this week. Today we introduce the Baja Burger from Mercadito.

What better way to round out our Eater Burger guest spots than with a little taste from South of the Border. Mercadito chef/partner Patricio Sandoval wanted to give us something that reflects his culture and the bold flavors they serve up at the River North restaurant.

The three-meat patty comprises chuck (50 percent), short rib (25 percent) and ribeye (25 percent) all ground in-house and served on a sesame seed hamburger roll with manchego cheese, tomato, avocado, lettuce, chipotle Mexican slaw and a chipotle aioli for that extra little kick. Want bacon? Just ask for it. The Baja Burger has been available all week (lunch and dinner) and will still be at Mercadito through the end of dinner on Friday for $15.50. Just tell your server you want the Eater Burger.

"I love the combination of the different meats and, although we don't have a burger on Mercadito's menu normally, this recipe really fits into the style of our food," Sandoval said. So go check it out.
