This week, Eater Chicago brings you a five-part mini series, where we take you on a video journey through Grant Achatz's Next and The Aviary, two of this year's most-buzzed-about openings in America.
During the videos we talk with Achatz and members of his team, including Next and Aviary's executive chefs, Dave Beran and Craig Schoettler. We'll give you a tour of both locations and go behind the scenes into all the kitchens, the super cool "ice room" and a first-ever look at the uber-exclusive VIP bar, The Office.
