Marcus Townsend, a former sous chef at Mado when Brandon Baltzley took over the kitchen and who will join Baltzley when Tribute opens in the South Loop, will host a pop-up dinner at Delicious on April 29.
During the six-course meal, diners will get treated to an amuse of brioche-encrusted watermelon; two appetizers (cold: radish sprouts, pickled jicama, charred ramps; hot: egg yolk, duck fat, pickled shallot, pineapple); an entree of short rib with bruleed pearl onion, shiitake and pear; an intermezzo and dessert (bourbon browned-sugar apricot puree, goat cheese, cayenne panna cotta).
The $50 dinner (exclusive of tax, tip and drinks, which you can get there from the full bar) will hold spots for 85 people. To reserve a spot, send an email with "Marcus Townsend" in the subject line and include the number of people in your party, your requested dinner time and a contact number for confirmation.

UPDATE: We received word on April 19 that Townsend will no longer be working at Tribute with Baltzley when the restaurant opens.
