Roots Handmade Pizza, from the guys behind the Fifty/50, is scheduled to open next month, and to help get the buzz out they've started posting some videos about what has inspired their new restaurant.
In the first of a series of four videos that will appear on the restaurant's homepage, Greg Mohr and Scott Weiner, head west to the Quad Cities to quash their craving for that area's pizza. Weiner said they go every few months and this will be one of the last times they make the four-hour trek since that style of pizza will soon be found at their West Town spot.
For their "research," they grab about a dozen or so pizzas that they buckle in to the backseat, while one jokes that "the saddest part is that my kid's in the trunk." So when Roots opens mid-April, expect to find hand-thrown pizza with all fresh ingredients, fresh homemade pastas, housemade sausage and bread from Bleeding Heart Bakery, which just also happens to be co-owned by Weiner and Mohr, and is opening in the adjacent space on Chicago Avenue.
Roots will also have homemade ice cream, will create their own root beer and will have between 50 and 80 beers, all from the Midwest, with 15 on tap. "A lot of cool things go into this concept, but it's all about the pizza," Weiner said.
