Wicker Park's The Bedford won't be open for another few weeks at least, but that doesn't have to stop you from trying chef Mark Steuer's (The Gage, Hot Chocolate) latest creations. From March 22-24, he'll be on a ride-along in The Southern's Mac Truck and, instead of tickets, he'll be serving notice with three special varieties of mac and cheese. Steuer takes to the road with sauce mornay in tow to preview some of the dishes in the hopper for his soon-to-open neighborhood kitchen and bar.
We would say run, don't walk, but you'll be better off pedaling if you can. Proceeds from Steuer's macs will go toward The Working Bikes Cooperative, and customers who bike to get their meal will receive a free drink at The Southern. What better way to work off some of those carbs?

Here's a peek at the macs Steuer has lined up for next week:
· Kasespaetzle: Gruyere mac and cheese with onions and pork belly. Yes, pork belly.
· Carbonara: Pancetta, shallots, peas, bechamel cream sauce, egg yolk and parm.
· Stroganoff: Roasted mushrooms, blue cheese, meatballs and sherry.
So, we guess you'll have to pedal extra hard.
