One way to combat food deserts? Add rolling restaurants. Mayoral candidate Rahm Emanuel said, if elected, he would legalize mobile food trucks and allow people to cook on board, which is currently against the law in Chicago. With nearly 600,000 Chicagoans living in areas without a nearby grocery store, Emanuel said, "I know it’s a threat to the restaurants, but I actually lean towards allowing [rolling restaurants]."
