Esquire food writer John Mariani predicts 2012's "top food trends" and says molecular gastronomy is out. The new blog post seems to be an attack aimed at folks like Grant Achatz, who Mariani has said "has had no influence on anyone's cooking at all." Now he claims molecular gastronomy's extravagance will "stop the already tiresome, wheezing movement in its tracks" saying that no one will open "a place serving thirty-course, $200 meals made out of thin air and chemically-induced aromas." Guess Next should cancel its upcoming elBulli menu. [~E~]
