Is Grant Achtaz thinking about launching a food truck? In an interview with the Daily Meal, which named him the 2011 American chef of the year, Achatz said it could be fun to do a food truck. And not surprising, he said, "we’d have to think about how to reinvent that," just as they did to restaurants when opening Next earlier this year. Like Next, the truck would change the food it serves every three months, but at this point it's just an idea, especially since it's still illegal in Chicago to prepare food on board a truck. "There are a lot of ideas floating around. We just need to let them mature. That’s the one thing I think me and my group, Nick [Kokonas], are good at. We’re good at being patient." [The Daily Meal]
