RM Champagne Salon to Open in February Behind Nellcôte

Back in mid-October the guys behind Old Town Social and Nellcôte, aka Element Collective, told Eater they planned to open a sexy Champagne salon behind the forthcoming Nellcôte in the West Loop. Now they have officially named it RM Champagne Salon and it will open sometime in Feburary of 2012.

The team, Chris Dexter, Chris Freeman and Jared Van Camp, have teamed with sommelier Jason Wagner (L’Atelier de Joël Robuchon, A Voce), who will create a wine program featuring domaine and estate-grown wines mostly from the U.S., Western Europe and parts of Eastern Europe. They just posted a new video preview on the site showing fancy people drinking bubbly out of crystal glassware. In addition, they tease a little bit of the food offerings, which includes chocolates, macarons, cheeses and even the possibility of pouring Champagne over cheese. Get excited people ... this place looks like it's gonna be hot.
