If it ain't broke, don't fix it, right? Well, wrong in the case of Alinea. Grant Achatz, at Gastronomika 2011 this week in Spain, talked to a small group (including Eater National) about his plans to overhaul the experience at Alinea. The move may include having a cellist come out to play a single note or a full piece, or having diners start their tasting menu in one space before moving on to another completely different dining configuation. Achatz said the changes will come sooner than later and that that it's time to move beyond "evoking emotions simply through the dish." [Eater National]
