Even though it hasn't opened yet, Urban Union was founded in 1997. That's because that's the year that partners Jason Chan and Epic alum Michael Shrader (who is the chef) met. The restaurant, located at 1421 Taylor Street, is being built with reclaimed materials and will have a seasonal menu featuring farm-to-table dining and blah blah blah. You know how that goes. But one piece that does sound more interesting is that Urban Union will also have a raw bar with east and west coast oysters, clams, shrimp, lobster and crab. Sounds like a little bit of a shake up to the traditional Italian spots down there when it opens in December. [TOC]
