After first learning about chef Allen Sternweiler's new project back in March, The Butcher & The Burger is finally open for business. The old fashioned-inspired burger joint with a walk-up counter and butcher service officially opened today at lunchtime.
While Chicago has seen a number of burger joints open recently, this aims to differentiate itself through the butcher shop service as well as by utilizing a variety of meats, including grass-fed and Wagyu beef, salmon, turkey, venison, shrimp, crab, elk, bison and more. And they're not just pounding patties for carnivores as they're even featuring a vegan burger.
The Butcher & Burger will offer breakfast service daily until 11 a.m., featuring Cafe du Monde beignets and coffee and various breakfast burgers, like turkey topped with a farm egg on a croissant with a side of bacon, and egg sandwiches. They'll also have different frozen custard flavors. And yes, this being a butcher shop, you can also take home pre-made patties and different cuts of meat to prepare at home.
Watch the restaurant's website for different butchering classes and, while many will be taught by Sternweiler, celeb chef Govind Armstrong, a friend of Sternweiler and his business partner, Josh Woodward, will make appearances from time to time.
