Matthias Merges is ramping things up at his forthcoming Yusho restaurant. The former Charlie Trotter's chef de cuisine has tapped rising chef Jennifer Petrusky as his chef de cuisine for the yakitori-inspired Logan Square spot.
Petrusky was recently named a chef to watch by Time Out Chicago and most recently was working as sous chef at GT Fish & Oyster. Before that, she worked under Merges at Trotter's, and last year, at 23, she competed in the Bocuse d'Or USA. Merges said the team is starting to come together and called Petrusky an "up and coming rock star."
