Metropolis Coffee Gives a Glimpse Into Roasting Process

Here at Eater Chicago HQ, we are big fans of Metropolis Coffee, whether getting a cup at their Edgewater coffee shop or having a latte at any number of locations around Chicago. And, despite being overlooked last week, Metropolis is still tops in our book. (Don't get us wrong, we're also fans of Intelligentsia and other smaller roasters, too, but we really love Metropolis.)

We just came across this new video, shot by former Graham Elliot director of operations Jim Colombo, taking us through the roasting process in 1:42 and we get a glimpse inside Metropolis' Andersonville roasting works. The only thing missing? Smell-o-vision. Now that would be pretty awesome.
