It's still a couple of months away, but little by little more details are leaking out about the Chicago date for Cochon 555. Stephanie Izard just signed on to compete in the porcine fest.
So far we know that Izard will compete against Mike Sheerin and Andrew Zimmerman on March 20. During the competition, which is at a to be determined location, each chef will break down and prepare a 150-175 pound heritage breed hog. Five winemakers—Alysian, Chase Family Cellars, Copian Wines, Elk Cove Vineyards and Red Car Wine—will showcase their wines as guests taste through and judge the pork preparations.
The winner, to be crowned the prince or princess of porc, will be decided by audience participation and a panel of 20 local judges (we hope they pick us!) and go on to compete in the national competition on June 19—the Grand Cochon at the Aspen Food & Wine Classic.
The competition series kicks off Jan. 23 in New York, where Eater will have exclusive live coverage and Eater National has a preview today.
