In the latest video showcasing just how cool cocktailing will be, Aviary chef Craig Schoettler demonstrates how to make an Old Fashioned in the rocks. By freezing water inside a water balloon with a blast chiller, the outside freezes first, allowing the middle to remain hollow. He then shows Alinea chef/owner Grant Achatz (looking a little like the mad scientist he is) how he injects the Old Fashioned, made with Buffalo Trace bourbon, into the center of the frozen orb with a syringe. The "drink" is then placed into a rocks glass, cracked open and then the already chilled beverage is now an Old Fashioned on the rocks. Pretty genius if you ask us.
