After last month's announcement that longtime Red Light chef Jackie Shen would depart the kitchen, things weren't clear on who would replace her at the West Loop pan asian spot. But now we learn that Ryan Fowler will take over as executive chef.
Fowler has worked with the KDK Restaurant Group, which owns Red Light as well as Opera and Gioco, for the last three years and has spent time in the kitchen with both Shen and Paul Wildermuth, who recently passed away unexpectedly.
While many of Red Light's favorites like Hong Kong Jerry and Chinese 5-spice ribs will remain on the menu, Fowler will make some well-needed elevations to the menu, including increasing the vegetarian and vegan offerings. Look for new dishes like Gunthorp Farms peanut pork belly eggrolls, Korean bulgogi beef flatbread and deconstructed Mongolian beef stew to make appearances when Fowler takes over after the New Year.
