Grant Achatz's upcoming restaurant Next will be quite the undertaking—just ask Joel Stein. The Time magazine writer chronicles his experience watching Achatz and Next executive chef Dave Beran prepare their first attempt at a menu from Paris 1906 based on Auguste Escoffier's cooking—and then eating it. "I am well aware that it is not good manners to tell someone to cook you a meal," Stein writes. "Though, when he started cooking them for me, I didn't exactly try to stop him." Smart man. [Time]
