Piece Brewhouse Expansion Underway

Get ready for more local beer, as Bucktown's Piece brewpub and New Haven-style pizza joint is expanding its taps yet again. According to Brewmaster Jonathan Cutler, they're increasing the size of their serving tanks in an effort to keep up with demand, which from the looks of it is fierce.

While that means more beer in the future, it might also mean a little less froth for now. We were in last night and couldn't snag a growler of award-winning ale to take home, and that might just be how things go for a while.

Cutler tells us he's still got "a few tricks up his sleeves," not to mention nearly 20 World Beer Cup and Great American Beer Festival medals under his belt. We can't help but think he could be eyeing some more, with an expansion that would not only let them pump out their classic kolschs and pale ales, but also test out more specialty beers throughout the year.

And who knows? It may even be time to start working on a big batch of secret elixir for Piece's 10th anniversary, which they'll celebrate in July.

UPDATE: Cutler added that this expansion is more out of necessity than anything else. "People are drinking beer faster than we can make it, LITERALLY. We are doing this to keep cold pints of beer in our customers' hands." To address that need, they'll be doubling the size of three serving tanks and, meanwhile, freeing up a tank to brew in right away.
