RIVER NORTH— Sarah Kosikowski (formerly of Las Vegas's Michael Mina at the Bellagio) is heading up the pastry team at the Trump Hotel. Kosikowski was a 2009 nominee for the James Beard Foundation Awards Rising Star Chef of the Year. [Grub Street Chicago]
LINCOLN PARK— Edward Walker has replaced Satko Ibrahimovic at Sprout. Word is Sprout will finally open tomorrow, and hopefully we'll get some more details on this $120 organic entree that's got everyone hemming and hawing. More changes in the neighborhood: Kate Neumann (mk, Alinea), will replace Elizabeth Dahl as pastry chef at BOKA. Dahl, along with husband Tim (Blackbird), is moving to Wisconsin. SOUTH LOOP— Aaron Deal (of Tristan in Charleston, S.C.) is now the executive chef of Custom House, replacing executive chef/partner Shawn McClain. McClain has chosen to focus on Green Zebra and Spring but will remain a part owner of Custom House. Deal, another JBF Rising Star Chef nominee, is definitely one to watch. [Dish]
