First we waited to find out the name. Then we waited to find out an opening date. Now we will just have to wait (hopefully) one week to actually taste the food at this long-awaited sister spot to Blackbird and Avec. (my god, people, haven't we waited enough?) If the food is as good as the anticipation is high, then we will be salivating all the way through our heirloom pork. Exec Chef Paul Kahan and Chef de Cuisine Brian Huston promise to deliver only the freshest sustainable meats, fish and seafood to accompany the massive beer list (with more than 100 ales, they're gonna make us think, aren't they?!) on the overall Belgian-inspired menu. Their hope is to change the menu daily, according to Huston, and based on what we've seen at the other restaurants, we know the food is going to be amazing. Don't believe us? Here's a sampling of what's to come: Oysters (Kumamoto, Hog Island, Rappahannock); mussels; wood-roasted black sea bass with Dungeness crab, morels and baby leeks; pork rinds; Slagel Farm pork country rib; Potée with pork cheek, short ribs and oxtail; Farro and of course, frites -- are you drooling yet? We just had to wipe up the keyboard. October 6 is opening date. Mark your calendar. And try to make a reservation. We dare you.
