Chef David Dworshak prepared Negra Modelo-braised beef sopes—the caramel and hops flavors of the beer serving as a perfect foil for the beef and tamarind in the dish. Guest chef Dirk Flanigan of the upcoming Il Coniglio paired Negra Modelo's notes of toasted barley with his "smoking steak tartare," which featured raw shallots, poached garlic, toasted capers, and crisp rice.
