The Chicago Department of Public Health shut down Red Door yesterday for fruit flies, leaving a notice on the Bucktown craft cocktail bar and restaurant's red door. Representatives say that the problems are cleared up and a return visit from the health inspector is scheduled for tomorrow morning. Yesterday, Red Door received a citation from the Health Department, noting existing factors to correct. These factors included open spaces between the structure of the building and the door (essentially, small cracks between the floor and the door), organization of a storage room in the basement—which is a shared storage room with residential units that also occupy the premises—as well as the primary issue for the citation, which was listed as 18-20 fruit flies spotted on location.
The structural and organizational violations have been immediately corrected, and those familiar with the restaurant industry will know that fruit flies are not necessarily a factor of cleanliness, they are a product of environmental factors. The Red Door team has worked tirelessly to not only treat and correct the problem immediately, but to look further past the initial issue, and to determine how to best resolve it once and for all. They have currently adjusted several elements to better control the temperature of the environment—adding additional fans for circulation, and re-structuring the set up of the restaurant to better regulate humidity to eliminate the problem.
