There's a new pizzeria coming to Addison Street, but this one has a notable pedigree behind it. Bartoli's Pizzeria is opening in April, named for Fred Bartoli, one of the founders of Gino's East in the 1960's. Owner Brian Tondryk is Bartoli's grandson. "I want to have the best deep dish in Chicago," Tondryk says. With his family background, he just might pull it off.
The Bartoli's recipe is different from the recipe Gino's East uses now. They will have a small menu, including thin crust (also family recipe), and focus on fresh ingredients. They will start off as BYOB and acquire a liquor license.
It will be fast-casual, focus on take out and delivery, with 28-30 seats inside. The space is the former home of Carreno's Pizza and requires a brand-new buildout. Tondryk took hold of the location in December.
Tondryk says he's planning on "winning awards." Take a quick trip down Addison from Wrigley after Opening Day and see if it's worthy.
