Amy Morton's month-old restaurant Found already has a seasonal menu, décor sourced from area purveyors and a Midwest-raised chef (Nicole Pederson), and now it can add a locally focused beverage program to the list. Found announced to Eater that Jan Henrichsen (Bin 36, Pastoral) was brought on last week as the restaurant's new beverage director.
Henrichsen, formerly beverage director at Bin 36, plans to revamp the beer and wine lists to reflect Pederson's food, which she describes as "smart and simple." The focus will remain on sourcing all-things local, including spirits from F.E.W.—located just blocks from Found—and Letherbee, as well as a strictly American wine list and beers sourced from Illinois, Wisconsin, Michigan and Indiana.
Even though she's only been on the job a few days, Henrichsen is already working on seasonal cocktails, like fat-washed Bulleit bourbon with boiled apple cider syrup and lemon, a drink meant to mimic the flavors of caramel apple. "What I want to make sure is that the beverage program both compliments the food and stays true to Amy's ethos," Henrichsen said. "Amy wants to create a place for everybody and we want to create a list where you can find at least one thing that you can not only enjoy, but be bowled over by."
