The Chicago brewing scene is about to get another addition today with the opening of Atlas Brewing Company. Following on the heels of Seven Ten Lounge’s remodeling last month, the new brewpub will be located right next door to the bowling alley at 2747 N. Lincoln. The space will seat 105 people with multiple booths and a 35-foot bar. “We hope it’s a great place for craft beer and craft food,” said Steve Soble of Spare Time Inc.
Soble hopes to produce six initial beers from their seven-barrel brewing system including a stout, smoked porter, double IPA and Belgian wheat. However, because they are still waiting on their brewer’s license they will only offer beers from other microbreweries in the meantime.
If all goes according to plan Atlas Brewing Company should have their own craft brews available by mid-July. Soaking up all that beer will be a changing menu of items from chef Joseph Pierro, formerly of Brunch Chicago and Henri. The foods will pair well with beer such as sandwiches, pizzas and mussels.
Construction for the brewery began in April but for Soble the dream started in the '90s and has been a long time coming. “It was something I’ve wanted to do for a long time ? and it just seemed like the right thing to do,” he said. “I want people to come into our place to get something really, really special.”
