It feels like a long time coming, but travelers through O'Hare International Airport finally have an opening date for The Publican Tavern. The second iteration of the popular Fulton Market restaurant will open on July 26, according to a report in Crain's. One Off Hospitality on Wednesday announced two chef promotions in preparation of their expansion.
The O'Hare restaurant will obviously need faster service than the original with visitors pressed by departure times. Publican staff's will aim to serve food in five to eight minutes. That's compared to 12 to 15 minutes over on Fulton Market. One Off has licensed The Publican to HMSHost, the noted airport restaurant operator that also handles Tortas Frontera By Rick Bayless. They'll serve breakfast, lunch and dinner with a menu that includes burgers, pork rings and frites, according to Crain's.
The 140-seat Publican Tavern's located in Terminal 3, inside a former Wolfgrang Puck's. Also, there's still no opening date —or name— for Publican's project coming to Wicker Park. One Off only says that location will open later this year.
While waiting for the O'Hare opening, check out the rendering below. It's close, but not 100-percent representative of the space. For example the signage will say "Publican Tavern" when the restaurant opens.
